I cannot attribute the poor quality of the dish I prepared to the quality of the meat. I cannot really attest to whether this is "good" or "bad" meat, as this was only the second time I've eaten liver to my recollection, the preceding time being in the form of pâté at a Jewish deli on a sandwich. Very diffferent experiences. The flavor of the meat was incredibly strong. INCREDIBLY strong. I let it soak in some local organic milk for about four hours, drained most of the milk out, and left it in the fridge for about a day. Maybe should have done otherwise, as it apparently can be left to soak for up to 24 hours. After trying to cook a simple liver and onions with bacon recipe, I found that, while tasty straight out of the pan, the flavor was overwhelming. I could taste the metalic flavor of the liver (or of the blood in the meat, which was still seeping out when I took it out of the fridge for the final preparation) for almost an hour after consuming, and it was a bit nauseating. There was no way I could have eaten more than a slice of it after cooking it the first time. Upon reheating, the flavor was still not quite right, and I had to throw it into a stew I had going. Whether that was for the best or not, I can't say, but I refuse to waste good meat. It was not until cooking it through a third time that the meat was tollerable, and I suspect that I may have left it raw in the middle of the liver slices on the initial cooking. I still have three more livers to go through, and some kidneys, so I'll have plenty of occasions to experiment with getting it right, or trying other dishes, such as making a pâté or liverwurst.


Firstly, crisp up some bacon in a skillet with some Organic Onions & garlic. Then add some mushrooms and herbs to your liking. Push everything in the skillet to one side and add in slices of organic liver. Turn down the heat to medium and cook through for 10 minutes.
